Just five minutes from the ramparts of Aigues-Mortes lies a spectacular site, shaped for centuries by the harmony of humans and nature : the Saltworks of Aigues-Mortes. Nestled between the lagoons and the Mediterranean, this unique landscape is both the birthplace of the famous Camargue Fleur de Sel and a refuge for exceptional biodiversity.
Each summer, when the wind calms, a delicate layer of crystals forms on the surface of the salt waters. This is how Fleur de Sel appears, carefully hand-harvested by salt workers in accordance with ancestral traditions. This know-how, passed down through generations, makes the Camargue one of the most iconic centers of salt culture in France.
But the Saltworks of Aigues-Mortes is not just about salt : it is also a natural sanctuary. Nearly 200 bird species find refuge here, including 157 protected species, such as the majestic pink flamingos. These preserved expanses offer a peaceful haven for migratory birds to feed, rest, or breed. The flora is equally remarkable : 208 plant species have been recorded, including 20 protected ones, some of which can only grow in these rare and fragile saline ecosystems.
Only in July and August, follow a salt worker and discover the traditional harvest of Fleur de Sel, an ancestral craft full of magic.
