Situated between salt and sea, the Aigues-Mortes salt works nestle in an exceptional environment. It is on these ponds, irrigated by water from the Mediterranean Sea, that food and industrial salt is produced, as well as the famous hand-harvested fleur de sel. Today, ten salt-makers maintain a tradition handed down from generation to generation, managing the flow of water according to sunshine, winds, storms and salinity.
