Originally, fougasse d'Aigues-Mortes was made with ingredients that customers brought to their baker, and was one of the thirteen traditional Provencal desserts served at Christmas. Fougasse d'Aigues-Mortes is just one of many existing recipes, and is therefore a completely different preparation from its savory cousins with grattons, bacon or olives. The word "fougasse" comes from the Latin "panis focacius", which gave rise to "fogatza", an ancient Occitan word.
