Located between land and the Mediterranean Sea, the Aigues-Mortes Saltworks stretch across the heart of an exceptional natural environment. This unique landscape, with its colors shifting with the seasons, has been shaped by human activity for centuries.
Just five minutes from the ramparts of Aigues-Mortes lies a spectacular site shaped by both man and nature over centuries : the Aigues-Mortes Saltworks. Nestled between lagoons and the Mediterranean Sea, this unique landscape is home to the famous Fleur de Sel de Camargue and an exceptional array of biodiversity.
Each summer, when the wind settles, a delicate layer of crystals forms on the surface of the salty water. This is how Fleur de Sel is born—hand-harvested by salt workers, following age-old traditions. This artisanal expertise, passed down through generations, makes the Camargue one of the most iconic salt-producing regions in France.
From 02/08 to 11/16, open every day.
From 12/20 to 01/04, open every day. Closed on January 1st and December 25th.
But the Aigues-Mortes Saltworks is not just about salt—it’s also a sanctuary for nature. The site is home to nearly 200 bird species, including 157 protected ones, such as the iconic pink flamingos. These vast, preserved landscapes offer a peaceful haven for migratory birds to feed, rest, and breed. The plant life is just as remarkable : 208 plant species have been recorded here, 20 of which are protected. Some grow exclusively in saline environments—rare, fragile ecosystems that add to the site’s exceptional biodiversity.
During the harvest season in July and August, a salt worker guides you through the traditional hand-harvesting of Fleur de Sel. This guided tour offers an immersive look into an age-old craft and lets you witness the magic of this delicate process.
